Which is likely to be most accurate my GPS or speedometer. Car is fitted with original wheels and specified tyre size but when travelling at 95km/hr by the GPS the speedo is registering 102km/hr. Travelling at 110km/hr by the speedo is 100km/hr by the GPS. Therefore without having the GPS in the vehicle with me (as I only use it for unfamiliar areas and don't carry it all the time), would I be "safe" using the speedo at 110km/hr without the possibility of a speeding ticket? Thanks

Vehicle speedometers are internationally calibrated to overestimate the actual speed to ensure drivers do not unintentionally speed. The GPS is fairly accurate but you should not rely on the GPS speed reading entirely as you are leaving no margin for error on your side and you are more than likely going to land yourself on the wrong side of the law.
