I am looking at fitting an aftermarket exhaust tip/muffler and was just wondering how far it is allowed to stick out past the rear of the car?

There is nothing in the legislation that states specific dimensions, however, it would need to be deemed acceptable in terms of not violating the external projection safety requirements.
Here's one explination extracted from a LVV website Q&A;
"There is no defined amount specified in the regulations for bits sticking out the front or back. The relevant piece of legislation says that a protruding object or fitting that has a functional purpose must be installed so that the risk of the object or fitting causing injury to a person is minimised."
If in doubt, get the advice of an LVV inspector before you commence the modification.
