While towing a caravan the car fish tails at over 80km/hr. Caravan is well within the towing capability of the vehicle. The vehicle is a Pajero LWB. Would anti sway bars on the car help or is there something else I can use?

Anti-sway bars will help reduce the amount of sway but first and foremost you should check how your caravan's weight is distributed. Too much weight at the rear of the caravan, behind the caravan's axle, will increase the amount of sway. When loading the caravan you need to distribute the weight evenly and ensure it’s secure. There needs to be sufficient downward load on the towball (normally around 30kg to 40kg) too otherwise you will have swaying/instability issues.
