Hi there
I own a car in New Zealand but am now overseas. Is it possible for me to sell my car while overseas? A friend of mine in NZ currently drive and uses my car so could help with filling paperwork or sign in my behalf etc. But do I have to be physically present or sign papers myself?

Apart from a sales receipt there is not really any 'papers' to sign.
Your friend can be the on behalf contact and once the deal is completed, the buyer can go online to the NZTA website to register that they have purchased the vehicle. https://www.nzta.govt.nz/vehicles/buying-and-selling-a-vehicle/selling-a-vehicle/
