Hi, we'll be going overseas for vacation for 3 weeks. Any advice please on how do I handle my two cars while we're away? Do i need someone who should atleast use it once a week or is it ok to leave them as is for 3 weeks without starting their engines? Thanks!

Three weeks isn't really long enough to need to worry about doing anything in particular. Most cars will maintain battery charge for this length of time and it's not really long enough to need to worry too much about over-inflating tyres etc.
Having someone use the car once a week isn't really necessary either - and in fact, unless they would be going for a long drive, just starting the car and taking it for a short drive is not of any benefit at all.
There is a small risk that the batteries may go flat in three weeks, particularly if they are high-end prestige cars with lots of computer controlled electronics, therefore you could disconnect the batteries, but personally, for this length of time I'd just park the car as normal.

Thanks for the info. My cars are 2006 mazda mpv turbo 4wd and 2005 toyota ist. Any problem with these models if i'll leave them for 3 weeks at my parking lot?

Mainstream cars such as these should be fine if left for 3 weeks. If you want to reduce the risk of flat batteries when you return, you could disconnect the batteries.
No need to remove the battery from the vehicle, just undo one battery terminal.
