Fish heads ginger and celery


4-6 fish heads (snapper pref)half a celery
1 onion
half of a raw ginger sliced
1litre and a half of water
pinch of salt
pinch of black peppercorns - grinded


Place fish heads in a medium sized pot
Add water and salt
Let simmer for 2 minutes
Then add celery and ginger
Then let boil for 6 minutes, then simmer again for 5 minutes or until cooked.

Roasted chilly cream fish heads


Fish heads of choice and back bones if you wish
500ml cream
whole raw ginger sliced
1 onion sliced into rings
Pinch of salt
Pinch of black peppercorns - grinded
2 raw chillies or to your taste


Place fish heads in roasting dish
Add cream, salt, pepper, onion, ginger and chilly
Put into a pre-heated oven 150 degree Celsius for 15 minutes or until cooked to own taste.
