I change oil/filter every 5000k with round town running or 10000 open road running... how often should fuel/air filter be done?

I'm assuming you are talking about a run of the mill petrol engine with an in-line fuel filter. Manufacturers generally have no specific time requirement to replace air filter elements, however they should be checked regularly to ensure they are not clogged and impeding air flowing through them. In dusty or fumey environments they will need replacing more frequently, but generally every couple of years will be adequate under most circumstances. Fuel filters will require replacement much less often, depending on manufacturer's recommendation.
